The Effect of N-nitrosation of Secondary Amines in Vitro by Fermented Celery Powder

چکیده

Abstract:N-nitrosaminesis a kind of poison which can induce cancer. Nitrite can react withsecondary amines to form N-nitrosamines in meat production. The objective of this experiment was to study N-nitrosamines formation ofthree kinds offermentationcelery powder (FCP506, FCP504, and FCP-homemade) and nitritein vitro nitrosation reaction system bydifferent pH, temperature, and the ratio of the substrate concentration. Results showed that the mount of N-nitrosodimethylamine (NDMA) and N-nitrosodiethylamine (NDEA) increased as the temperature increased, meanwhile, decreased as the pH reduced.The mount of NPYR generated by proline(Pro) had littlerising, but declined by pyrrolidine (PYR). In all these reactions, more N-nitrosamines were generated when NaNO2 was excessive.However, we found thatN-nitrosamines formation of three kinds of fermentation celery powder is no significant difference, but which is significantly lower than sodium nitrite (NaNO2) in all reactions(P< 0.05).
